Cammino di San Jacopo : Lo chef Alessio Morganti dedica quattro tappe gourmet alla Jacopina

Il Cammino di San Jacopo unisce da sempre Santiago di Compostella con Roma passando  dal XII secolo, se non prima, da Pistoia. Un Cammino, fisico e spirituale, che sarà rinsaldato con il 2021 Anno Santo Jacopeo

Pistoia in attesa di questo sentito Anno Santo, dedica al cammino e ai pellegrini la Jacopina. Una focaccia di farina integrale, farcibile a piacere ed a forma di conchiglia, simbolo del pellegrino.

Durante la presentazione avvenuta nei giorni scorsi presso l’azienda Gustar-Dmp, luogo in cui è stata messa a punto, molti hanno potuto vederla, toccarla con mano ed infine assaggiarla.

Questa la presentazione dell’assessore al Turismo e alle Tradizione Jacopee del Comune di Pistoia Alessandro Sabella, che tanto si è attivato per la Jacopina e tutte le varie iniziative legate al Cammino e all’Anno Santo Jacopeo nella nostra Città.

“Pistoia, Pistoria, Pistorium, ai tempi di Roma e del Medioevo, era la città che riforniva le truppe del suo pane – la presentazione dell’assessore Sabella – Dal 1145 siamo poi stati meta dei pellegrini, dopo che il vescovo Atto ha portato, da Santiago de Compostela, all’interno della Cattedrale la reliquia di San Giacomo il Maggiore,  un frammento della scatola cranica di San Jacopo. Pistoia città dei fornai, crea quindi la Jacopina, la focaccia del pellegrino”.

“In particolare voglio ringraziare Gastone Pegoraro, fondatore della Gustar, che si è messo subito a disposizione per dare forma e sostanza all’idea che avevo in mente, – ha continuato Sabella – e anche tutte le associazioni di categoria che hanno manifestato da subito il loro interesse. È ovvio che ci sarà bisogno della collaborazione con i fornai, con i ristoratori e tutte le persone del settore, oltre alla fantasia dei cuochi, visto che la Jacopina si applica a tantissime varianti”.

Il primo lancio della nuova focaccia avverrà il 16 luglio in piazza del Duomo, alle 19.30, a seguito della vestizione di San Jacopo sulla cattedrale. Nell’occasione, infatti, i figuranti del corteo storico ne distribuiranno circa mille ai cittadini e ai turisti presenti alla manifestazione religiosa, così da poterla scoprire e assaporare per la prima volta.

Lo chef Alessio Morganti del ristorante Stilnovo in via del Duca è già pronto con quattro varianti gourmet della Jacopina:

“Insieme a Giulia (Giulia Nencini responsabile del ristorante Stilnovo -ndr) abbiamo deciso di proporre quattro versioni della Jacopina. Ciascuna sarà legata a quattro particolari momenti del Cammino, utilizzando ingredienti legati alle varie tappe. Da domani 16 luglio ne proporremo una versione la settimana. Inizieremo con la Jacopina Compostela.

  • Jacopina 25 – dedicata alla festa del Santo Patrono di Pistoia

    found a sea shell and gave it to my 4 year old daughter
    and said “You can hear the ocean if you put this to your ear.” She put the shell to her ear
